I'm a working mom of three very active young kids. Most nights of the week we have Scouts, karate, piano, etc. or something to get to. Would you please share with me your favorite simple meals that are family friendly? My kids aren't super picky, but I'm not a chef and so they aren't used to eating things like quinoa, kale, etc. and probably aren't going to start anytime soon even if I want them to.

So far I've been grilling a lot of chicken and having salad or vegetables as a side; scrambled eggs with turkey sausage; sloppy joes with lean ground beef and light bun; white turkey franks with light bun; chili with lean ground beef. We always have a fruit and a vegetable. But I'm running out of simple, quick-to-make ideas.

Thanks in advance!

  • I like to make fruit smoothies for an on the go breakfast, I always make them the night before and pop the blender in the fridge, and they are so versatile you can put anything in them I even add veggies sometimes like kale and no one notices! :) I also make tuna salad sandwiches only I swap the mayo with an avocado, or about a root vegetable stew that you can throw in the crock pot I usually make mine with some winter squash (I love butternut) carrots, onions, celery and potatoes with a tomato broth so I use tomato sauce and water it down quite a bit to make it brothy lol and some times I make it mexican style with salsa it's so good and filling. I know I didn't give you exact measurements sorry about that I usually don't write down the measurements, but I hope I helped a little.
