I have a son with special needs one of them being low muscle tone with sensory issues and texture sensitivity. The only way he will somewhat eat or try food is if he eats off my plate or I eat off of his. The food that he can eat is usually high in calories because he is on a gluten, dairy, eggs, soy, shellfish, nut free diet. Any Suggestions on how I can stay on track and not overeat and still be able to help my son? Thank you :)

Fish, poultry, beef, veggies, beans, lentils!
You can have dairy/eggs/nuts when he's not around.

Spit it out when he's not looking. Portion control. Or increase your activity level.

Would it work to use a big plate, but your food on one side and his on the other? Or would it be too much risk of cross contamination? What if you put your food on a small plate, his on a small plate and put both of them in front of you?

Try making the same thing for both of you except make yours healthy and his the way he needs it
