Low carb and frozen foods?

Its not easy finding easy to make frozen dinner that are good semi low carb or low carb foods. I did find Atkins, they have Mexican chicken and Pasta bake meals that I like. However Atkins dieters say they're no good because they have carbs in them.

Pasta bake has about 6 or 7 bites of white noodles in them and chicken Mexican dish ahs sugar in it. However if you compare Atkins frozen foods to say Weight Watchers Atkins are way lower in carbs. the package says 10 carbs but Atkins dieters say its more like 13. But if you compare it to Weight Watchers of Lean Cuisines which have like between 35 and 50 carbs its way healthier then those.

However I still feel funny about eating white noodles, I have borderline diabetis and need to stay away from white carbs even though its only 6 or bites.

I went to Walmarts last week and found out that they have a nice selection of frozen meats low fat meats fish and chicken breast and eve roast beef. That's good because its easy to make just microwave it but there aren't any vegies or clean carb sides with it.

I add my own vegies but I think I will just make the meat chop the vegies in it and microwave it then maybe just add low fat cheese slice on whole wheat sandwich thins microwave it to make a hot sandwich or I can also just get whole wheat crackers and eat that with it, and or I can also get crunchy corn taco shells or soft corn or whole wheat tortillas and make it into a taco with salsa yum! That would be quick and easy still microwave the whole thing.

Im just wondering if anyone else has any ideas on quick easy microwavable recipies for low carb and semi low carb dieters? I believe semi low carb is the correct term for me. I can eat baked potatoes whole wheats, corn carbs and beans for clean carbs so.

    I usually overcome this by cooking a regular meal and freezing it in serving sizes. This way it's a quick reheat and you know what you are eating. However, I've found it works better for me if I cook 2-3 big meals on Sunday, allow to cool, and portion them for the fridge. They keep all week, and it's a quick zap in the microwave.

I also have a rotisserie already cooked chicken by krogers, if I cut off the skin and eat breast meat only put it on missions fat free corn tortilla with fat free pintos and low fat cheese microwave it is also convenient. I could freeze the chicken though and I might do that tonight so it lasts all week as well.

    In reference to the quote above, you should be avoiding low-fat and fat-free foods

    One freezer meal that's really good and low carb is fully cooked frozen chicken breasts topped with spinach dip.

    If you are eating reduced carbs, you usually have to increase fats / oils/ nuts.
  • Well not in my case, I do eat some high fats but have been eating lowfat mostly.
