I have decided to keep a pictorial diary of the foods/meals that I eat as I make my journey back to health. Some pictures will be new recipes that I am creating for the bariatric cookbook that I am writing, some will just be because I think the plate looks like a work of art. I was raised to believe that eating should always be considered an event. My grandmother's philosophy was if a dish for a meal got ruined then add another piece of crystal, silver, or china to the table and no one will notice. So here goes my first entry...

    Last night my husband made chicken vegetable soup which we paired with grilled cheese made on nine grain and seed bread. It was so good that I had to have a rerun for lunch. I decided that the soup was so good that it deserved a special presentation. So here's today's lunch: A steaming mug of chicken & veggie soup, grilled (to perfection) cheese, and fresh blueberries.

    What's a meal without candlelight?

    I got them a couple of years ago from Bed, Bath, and Beyond. It's a soup set with four mugs and four plates. For me a pretty setting and presentation is just as important as the food itself.

    Ham and cheese scramble with whole grain/seed bread and a touch of coconut oil instead of butter.

    Lunch today...Cashew chicken salad, red bean salad, and glazed blueberries. I guess you can tell by my pictures is that I am a blueberry fan. Everything on this plate is diabetic friendly, weight loss surgery friendly, and heart healthy.

    Thanks everyone! I know that there is a site for pictures however I am writing a cookbook and wanted to start a thread specific to my recipes. A lot of times I do post in both places. I will post the recipes as soon as they are copyrighted. One of the things I do need is testers for my recipes. I will post the recipes soon I promise.

    The pulled pork is a recipe my husband and I developed. Of course I had to have my mixed power greens. I have discovered dandelion greens and they are fabulous. I plan to incorporate them into more of my meals. But the coleslaw and potato salad are from the deli. I have three tools in my kitchen that are an absolute necessity for me..an ice cream scoop (measures a half-cup), a cookie scoop (measures a quarter-cup), and a melon baller (measures about a tablespoon). Oh and of course my kitchen scale. Since this lunch is a little heavy on fat I used a bread plate and only had a quarter cup of the potato salad and coleslaw.
