Stuck long term at work with emergency work... how to deal, what to bring to keep on track?

I really couldn't find anywhere else to ask this, I hope it's ok here.

We in the Mid-Atlantic's got a heck of a storm coming.

In my job, last time this happened a few years back, I got stuck at work for over 72 hours. We're not allowed to sleep, it's against the workplace rules, and that rule was enforced. So, I'm looking for stuff that's going to keep me going. I'm expecting to be stuck at work two days, hopefully no more.

I'm trying to think of what would be great and healthy snacks that I have in stock here. Fortunately I know my boss, and unlike others he won't provide us with food (other bosses in the same company do provide food, but it's stuff like heros, cakes, chips and candy), so I want my own healthy stuff so that I keep satisfied and avoid that stuff. Last time I ran to the diner when it opened, and got myself some not so good food. I'd rather do this right and keep on track if I can.

I know we have some others who may suffer the same in their lines of work, so maybe this will help them too.

Right now, I have my main meals for the two days: hard boiled eggs for breakfast, 4 oz chicken thigh meat with farro, beans and mixed veggies for lunch, and a can of tuna with some radishes and romaine for dinner, my usual greek yogurt and steel cut oatmeal in betweens. All of these are one serving as labeled, measured.

So far I've thrown in my bag:
- 2 Nature Valley Oat and Honey granola bars (is this too much with the oatmeal?)
- some homemade peanut butter (dry roasted peanuts and some Hershey's 100% Cacao)
- some tea (decaf green and caf black)
- water
- chick peas (about 1 cup). I wanted to make hummus but the store was out of tahini.
- carrots and celery
- apples and pears
