Chicken Cordon Bleu - Tasty Food on A Food Budget

As an avid amateur chef my dream is to have delicious meals that don't cost a ton of calories to enjoy. So hopefully with the feedback of my MFP buddies you can let me know how you like my stuff. *Disclaimer* Everything is weighed by a food scale. I only use my measuring tools if absolutely necessary seeing as they can easily be over calculated when staring at them. I also include lower calorie alternatives that may change the outcome of the calories ingested.

Here Goes:
Servings: 4
Calories Per Serving (as is): 350
Total Fat: 13 g

0.50 cup (30g), Seasoned Panko Breadcrumbs (I prefer crushed fat free croutons seasoned but if you don't have that a little panko goes a long way)
4.00 slices (18g), Bacon (Turkey Bacon is also delicious!)
0.40 oz, Publix Monterey jack cheese (Optional)
2.00 oz, Thin Sliced Black Forest Ham
1.00 oz(s), Mozzarella Fat Free (Optional)
2.00 slice 21g, Munster Cheese (Optional)
1.00 oz, 1 oz Grated Parmesean Cheese (Nom)
9.05 oz(s), Chicken - Breast, meat only (Each breast should be butterflied to 1/4 of an inch for easy rolling. 2.5 oz per chicken breast total)
Tooth picks or Grilling skewers
Spray Olive Oil

Seasonings:
Pepper (To Taste)
Lawry's Seasoning Salt (To Taste)
Cayenne Pepper (I like things spicy so it's up to you)
Garlic Powder (To Taste)
Liquid Smoke
Worcestershire Sauce
Crushed Red Pepper (To Taste)
Taco Seasoning (1/2 tbls)
Cumin (1 tsp)

Step 1:

Pre-heat Burner to med-high on stove - Pre-heat oven to 350

Cook bacon until crispy brown then sit off to the side.

Flatten chicken breast and butterfly in half. Each butterfly should be about 1/4 inch thick. Marinade in liquid smoke and Worcestershire sauce for 15 min. Add together panko and seasonings in plastic bag. Shake to thoroughly mix. Place fillets in bag and coat with mixture.

Step 2:

Lay chicken flat and place a thin layer of ham, then cheese, bacon, and the other piece of ham on top to keep the cheese in. Roll chicken up and skewer so nothing falls out. Spray olive oil in pan holding for 5 seconds. Place the chicken roll-ups in pan and sear each side until golden brown. Add another 2 second spray to each chicken roll-up before step 3.

Step 3:

Place skillet in pre-heated stove for 10 min until juices run clear and cheese is melted.

Serve!


This is my first time showing someone my recipes so I really hope you all like it! If I left anything out or you have questions please don't hesitate to ask and I will answer them the best I can. I served it with roasted red potatoes and green beans or an even lighter idea a salad or quinoa with roasted garlic and lemon.

**The Calories will be less if you use less cheese or no bacon. I think these taste delicious in this recipe but if you are a little off on cals for the day you can always omit these things**
