Meals on the go

what are your meals on the go that are rich in healthy nutrients, high in fiber yet low on sodium, fat, carbs and sugar?
Due to the nature of my work I am on the go a lot and don't even take a lunch break to eat out as there is never a healthy choice out there. Thus far, my meals or snacks on the go have been: turkey jerkys, deli meats low on sodium (these usually are too processed and high on sodium so I eat them sporadically), cottage cheese (fat free and plain), maybe a protein bar (iim not comfortable with their sugar content or sugar substitutes), grape tomatoes, mozzarella cheese sticks (yet sporadic as they are high on cholesterol and fat in general), fresh pineapple, raw spinach...

    I like mozzarella string cheese, carrot sticks, and frozen grapes.

    Pack something you put aside from whatever you made the last time you cooked.
  • This week I made coconut milk curry baked chicken breast and I've either been eating it as is or cutting it up and putting it in a bed of spinach. :-)

    I will cook for 4 in the evening and then my husband and I take a portion each to work for lunch. We're currently cooking hairy dieters (bikers) meals from there recipe books so they are all under 500 cals.
