    Spinach and Bean Soup

    Protein - 10g

    1 medium onion, chopped
    1 tablespoon EVOO
    1 teaspoon ground cumin
    1 teaspoon oregano leaves
1 (15.5 oz) can low sodium kidney beans (rinsed and drained)
1 (14.5 oz) can of no-salt-added diced tomatos
4 cups low sodium chicken broth
1 pkg (10 oz) frozen spinach
1 cup of pre-cooked brown rice (or quinoa, or a blend of both)
    Juice of 1 lime

In a large pot saute onions in olive oil until onions are translucent. Add cumin and oregano. Stir in beans and tomatoes, broth, and spinach. Heat to boiling and simmer 15-20 minutes. Add the rice and serve.

I make a great vegetable beef soup, but I am looking for some ideas to give it more flavor. I currently use a low sodium beef base along with my stew meat, but it still comes out fairly bland. I tried organic steak and chop seasoning, but that only made it too peppery for me. I am looking for something that will replace any butter, or sour cream to give it more flavor. I want flavor, not fat and calories, and I am really working hard at my food plan. I have little experience with herbs, and I don't want to over do it. Any help would be greatly appreciated.

I like adding greek yogurt instead of sour cream to beef soups, but that might just be me. In terms of flavour, I never make soup without adding some fresh dill and parsley right at the end - it really takes it to the next level. A squeeze of lemon might be nice too, if you like sour soups.

Awesome ideas everyone, thanks for sharing! I wish I could add something, but I’ve been really boring with my cooking lately (just roast meat of some kind + side of veggies). This is inspiring me to get back on the ball!
  • Just eat less of what you like

I eat what l like but look at the portions of prepared meals and go with or cut down the size. Also I eat freash food and follow the same guidelines. I am usually looking for a few calories to add through the day so I fill it with skinny cow ice cream bars, yogurht, string cheese, or fruit.
