The perfect balance

Hi,
Looking for some ideas.....
Without giving you my life story I need to lose weight (pretty much why we are all here!)
I'm vegetarian and make 75% of my food/meals from scratch.
Over the past few months I've been trying to watch what I'm eating but I never seem to get my diet as good as I want.
I eat too many carbs, working on this and have reduced them from around 80% a day to 60ish%
I eat virtually no iron or calcium and too much sugar BUT it's all mainly from fruit! What should
Anyone have advice on how to 'tune' my diet?

Also while changing my breakfast from things like cereal to porridge, protein pancakes, fruit salad etc. I think I've realised that by lunch time I have a sore head..... only thing I can think is too much sugar?
I eat at work, we have a microwave.
Any advice?
