What vegan meal can I make?

On a 14 hour shift tomorrow and lacking inspiration for what to take to work (have access to a kitchen so can cook/throw something together there)

Leeks
Courgettes (zucchini)
Fresh ginger
1/2 red pepper
Hummus
Corn on cob
Broccoli
Spinach

Have usual cupboard stables (oil, baked beans, chickpeas, stock, pasta, etc)
