Different fats and cholesterol - can someone teach me?

When I look at my basic nutrition: fat, protein, carbs I'm getting an a+. I'm usually spot on when I look at my weekly ratios.
What's curious to me is what I see when I look at the nutrient lists.
It tells me I'm eating too much cholesterol, not enough saturated fats, and too much mono and poly unsaturateds.
Can someone help me understand the different fats?
Also, isn't there good cholesterol and bad cholesterol? I believe most of my cholesterol comes from eggs- they are a definite presence in my diet- and given the cold weather (-5 this morning), a beef roast is usually on the menu about once a week too.
