I have been tracking food for a month now. I am tired of the same old food. Boring and easy was working but I need more flavor!! Would like recipes that use any of the following meats. Tilapia, Salmon, Shrimp, Ground Chicken or Ground Turkey. I love almost all veggies! Maybe stews?

I just made this the other night and it was pretty good:

    Lemon Pepper Shrimp Scampi

    Ingredients

    1 cup uncooked orzo
    2 tablespoons chopped fresh parsley
    1/2 teaspoon salt, divided
    7 teaspoons unsalted butter, divided
1 1/2 pounds peeled and deveined jumbo shrimp
    2 teaspoons minced fresh garlic
    2 tablespoons fresh lemon juice
1/4 teaspoon freshly ground black pepper
    Preparation

    1. Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl. Stir in parsley and 1/4 teaspoon salt; cover and keep warm.

    2. While orzo cooks, melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Sprinkle shrimp with remaining 1/4 teaspoon salt. Add half of shrimp to pan; sauté 2 minutes or until almost done. Transfer shrimp to a plate. Melt 1 teaspoon butter in pan. Add remaining shrimp to pan; sauté 2 minutes or until almost done. Transfer to plate.

    3. Melt remaining 1 tablespoon butter in pan. Add garlic to pan; cook 30 seconds, stirring constantly. Stir in shrimp, juice, and pepper; cook 1 minute or until shrimp are done.

    STIR FRY

    1/2 sweet red pepper sliced
    1/2 green bell pepper sliced
    1 small onion sliced
    3 med carrots sliced
    3 stalks celery sliced
3 servings Birds eye frozen broccoli
    1 C steamed shredded cabbage
1T cooking oil (I use Smart Balance)
8 oz Laura's lean eye of round steak sliced thin
4-6T Teriyaki sauce (I make my own)

Place steak in the teriyaki sauce to marinade. While meat is marinating, prep veggies.
Steam (do not use oil) all veggies until crisp tender (Use waterless cookware or a small amount of water if needed.) Remove from heat and set aside. In a large skillet heat 1 T oil. Add the meat and teriyaki sauce to the oil and stir fry until done. Add the veggies to the meat until heated through. Makes 2 large servings. Each serving has about 391 calories and about 55 carbs. You can add the cabbage to the other veggies or put your stir fry on top and pretend it's rice. LOL

I love this fish taco recipe. It calls for red snapper but I always use tilapia. Serve with black beans, delicious! Sometimes I just use the seasoning on the fish fillets and serve with veggies.

Fish tacos! I season a talapia fillet with cajun seasoning, and lemon pepper. In a nonstick pan I put half a TBLS olive oil, 1 smashed garlic clove and some red pepper flakes or a jalapeno. Warm the oil to get it flavored with the garlic and pepper usually about 2 min on a low setting. Remove the garlic and jalapeno or pepper flakes with a slotted spoon. Turn the heat up to get the pan hot. Place fish in pan and cook until you see the edges cooking and the the bottom side is browned, flip and continue until thoroughly cooked. Break up the filet and put it into corn tortillas, add a squeeze of lemon, add diced white onion, chopped cilantro and salsa, mango salsa is really good too!

Chipotle turkey burgers. Puree a can of chipotles in adobo sauce. Use the whole can with the sauce. Season ground turkey with garlic powder, onion, powder, salt and pepper. Add some of the chipotle puree to taste depending on how spicy you like things. Form patties and brush the outside of the patties with more or the chipotle puree. Grill, bake or cook in non stick skillet sprayed with cooking spray. I serve mine on whole wheat buns with swiss cheese, lettuce, tomato, and avacado.
