Alternate to Enriched White Flour...

I know I have a lot of options...what's the best? I'm using it more as a thickener in a paprikash (Hungarian paprika chicken stew). The white flour has so few nutrients and so little nutritional value with huge amounts of calories.

Any good suggestions?? Something with little to no flavor but similar thickening abilities. Wheat flour maybe?

    I swear by konjac as a thickener, but it's tough to find in its dry form.

    Try cornstarch or just a tbsp or two of instant mashed potatoes. Both work like a charm.

    Or if you're trying to avoid adding carbs, try taking some of the sauce from your dish, sticking it in a blender with a mashed carrot and/or cauliflower. Hit it with the blender or a stick blender and add it back to your main stew

    Wheat flour, corn starch, arrowroot powder, mashed potato flakes or you can puree vegetables and use that to help thicken. the potato flakes and vegetable puree won't be quite the same texture but you might like it. I'd try a few different options over the next few times you make it and see what you like best.

    The amount used to thicken sauces is not very much and not something to be worried about the calories......wheat flour will have the same calories............use whatever you want.

    Arrowroot powder, coconut flour, almond flour.

    Corn starch works well. Xanthan Gum does, as well, though might change the mouthfeel some in sauces.

    For thickener, definitely arrowroot.
