Cauliflower

I had this cauliflower at a Chinese restaurant in San Diego and couldn't get enough of it. After searching on-line and a little experimenting, I came up with this. Very low calorie and delicious.

Preheat oven to 450.
Cut cauliflower into small pieces.
Mix olive oil and curry powder together (1 tablespoon olive oil to one head of cauliflower and 1 tsp curry powder)
Pour olive oil mixture over cauliflower and mix well to cover.
Place cauliflower pieces on a cookie sheet -- not too close together or they will steam instead of roast.
Salt and pepper to taste.
Roast for about 25 minutes and remove when nicely browned and slightly crisp.
