Couple of questions

Hi All,
So I have a couple of questions -
1. So when I workout in the evenings Im usually tired and can't put in much effort, as a result eventhough I end up on the elliptical for 60mins or so and burn 500 cal. My heart rate is usually quite low (in the fat burn range), its like leisure walk. So I was wondering if I can still count these calories as workout just because I did not really take my heartrate to the cardio/peak range and its way below my target HR. Does that even count as exercise or is it just waste of time?
2. Similarly, when I feel low and feel like muching junk, I grab some candy and eat it. However, I make sure im still below my 1200-1300cal range, I know Im not feeding my body healthy but in the few days I do that, does that affect my weight loss coz I am still within my goal but lot of fat instead of protein?
