Breakfast Muffins?

Nutty Bran Muffins
(makes 9 muffins, approx 158 calories each)
75g bran flakes
200ml hot skimmed milk
150g self raising flour
1 teaspoon bicarbonate of soda
75g ready to eat dried fruit of your choice, chopped
finely
2 eggs, beaten
50g low fat margarine, melted
15g demerara sugar
*Preheat oven to gas mark 5/190°C/fan oven 170°C.
*Put bran flakes in a bowl and pour over hot milk and leave to soak for 5 min.
*In a separate bowl mix the flour, bicarbonate of soda and chopped fruits. Stir in the eggs, melted margarine, soaked bran flakes and left over milk until combined.
*Divide mixture between the muffins cases, sprinkle over the sugar and bake for 15-20 minutes until golden and risen.

I really enjoy these pumpkin muffins
I made about 14 of these from one batch and they came out to be about 158 calories each.
