Rapid weight Fluctuations, gluten allergy?

Short summary of myself. Second push on myfitnesspal. We're trying a variation on the 5:2 diet (Tuesdays/Thursdays as fast day), with 2 fasting days, and normal days using myfitnesspal as a calorie counter. So far, since February, I'm down 35+ pounds. I've noticed that my weight spikes considerably (8+ pounds over a weekend), especially during the weekends, when I tend to do more exercise (yard stuff), but watch calories less (beer and wine, more calories, perhaps 500-1000 over for a day or 2).
I notice that my weight really normalizes once the week starts again, and I usually lose the weekend weight plus a pound by the end of the week. Rationally, I'm not literally eating 8 extra pounds over the weekend, so I think it's a matter of water retention, and maybe a possible food allergy? The reason I suspect a food allergy is that, on the fasting days, we're usually high protein and High veggie carbs, with little to no bread, rice, pasta, etc.

I don't think weight changes are due to a food issue. I would imagine your change would be due to the increase of extra calories over the weekend. Beer and wine will spike my weight as will those extra calories just due to water retention. Also, weight will naturally change daily and hourly.0

Sudden weight gain and loss, that's normal thing about those type of "jumping diets" - diets where you alter calories, food, carbs, etc you ate every day or few days a week. That will make you lose and gain weight fast. Of course not fat but water. Eating more carbs, salt, alcohol is what makes you retain water. And at those days where you do not ate them you are obviously lighter. If you want to measure your fat loss as accurate as possible stick to type of diets where you do not alter food in any way - same amount of cals, carbs, foods, etc every day. OR, weight yourself once a week at same day and time.0

Oddly enough, I wouldn't rule out the possibility of this being related to a type of food allergy. Before I discovered I was gluten intolerant I had somewhat similar problems (among a myriad of physical symptoms) that include almost unbelievable bloating/abdominal distention and huge spikes in weight (5-10 pounds overnight). I can only assume it would be linked to water retention, but as soon as I eliminated gluten from my diet, the bloating and insane weight spikes were history.0
