So simple, so tasty
blend 1 ripe banana and 2 eggs in a blender with a touch of vanilla extract and a pinch of salt. In a hot pan over medium heat, cook 1/3 of the mixture in coconut oil, just like you would a regular pancake. Make two more pancakes. Top with a table spoon of finely chopped walnuts and a tablespoon of real maple syrup. about 300 calories and very satisfying
