Make ahead meals

On Sunday's I make hummus, slice veggies and roast beets. Sometimes a make a small batch of healthy pizza dough (and prepare healthy toppings). This way I can have a healthy pizza w/o buying frozen "health" food, which are usually high in sodium. Make ahead meals/snacks are a great way to keep on track. What are some make ahead meals/snacks you like to make?
