It's a fat molecule added to foods as an emulsifier, and can be used as a thickener in processed baked goods. It is not any more dangerous than any other type of fat, and is likely used in such a small quantity in your granola that it has no effect whatsoever on your health, good or bad.
Enjoy your granola!0
