Hi all! Does anyone know of any quick, simple recipes for two for an evening meal please?

PORK CHOPS with MUSHROOM GRAVY
2 boneless center cut pork "chops" 4 oz
2 TBSP ap flour
salt & cracked black pepper
non stick spray-olive oil
6-8 oz mushrooms sliced
1 TBSP onion/shallot minced
2 TBSP white wine
2 TBSP pioneer brown gravy(from a packet)
2/3 c water
Salt and pepper the meat on both sides. Place a 1 TBSP of flour over each chop.
Pat and turn over the meat to coat both sides with the flour. Set aside.
Stir the gravy mix into
Spray a non stick skillet with cooking spray-in a cool pan- place all mushrooms in a single layer. Turn heat on to medium high. Cook turning occasionally with a fork till all are golden. Remove to a plate.
Spray pan again, and add meat. Do not move it around for a 1-1/2 minutes. Turn over when there's a little golden color and cook the other side the same way. Remove to a plate.
Add the onion and cook stirring for 2-3 minutes. Add the mushrooms back in, stirring for a minute, then add the wine.
Continue cooking for 1-2 minutes, until wine has mostly disappeared.
Stir the gravy/water mix again to combine and pour it into the mushroom-onion mix. Cook stirring for 2-3 minutes until thickened.
Add the chops back to the pan, covering with the mushrooms/gravy.
Cover and turn the heat off, and let sit for 5 minutes to finish cooking the meat.
You don't want to over cook this, cook just till the pink is gone.
