I will be leaving on Tuesday for a 3 week adventure in Costa Rica. I will be unable to log in to track my calories, but I do plan to write down what I eat to help with staying accountable. I am still fairly new to this so any other travel pointers would be helpful. I do plan on enjoying myself, but don't want to overdo it either.
Any advice would be appreciated! Thanks!

I did not log for my two weeks in Ireland and did well. I ate three meals a day, plus a snack, and was surprised I didn't gain any weight because I figured I might be eating more calories than I burned. We were on the go constantly, walking a lot. Looks like it was enough.

Except for a few rare occasions, I stopped eating when I felt satiated, and I ordered a lot of vegetables, fish, salads. I loved my daily snack too, especially the scone. My goodness, scones in Ireland put American scones to shame. :)

I think the fact that you're thinking about it and trying to plan for it says a lot and it sounds like you will do fine. Since you can't track your food try to make sure you're getting in some extra exercise. Enjoy you're trip and good luck.

I didn't log for 6 weeks as I travelled Asia, and ended up losing 4kgs! I was just keeping active whilst travelling, plus sweating in the heat helped! haha. Enjoy Costa Rica

You can do it. Look for fruits and veggies. You might enjoy the seafood.
You will have lots of opportunities to eat beans and corn.
Be aware of portions when you are eating bread/rice/sweets.
