So, on this it tells me I should be eating 1,600 calories a day, then i do Insanity and stuff then its says I should be eating the amount of calories I burned from these.
Do i really have to or will it be fine if i don't? I want to have enough energy so i need to know whats best! I think 1,600 is more than enough for me.
Im 5'5 and 122 lbs.

Lots of people eat back their calories. Lots eat half back. lots eat none. ;-) It'll be a transition as you figure out what makes you feel satisfied and still allows you to lose weight.
I recommend you start with meeting your daily target (1600) and then if you work out and feel hungry, eat back half those calories. In a few weeks see how your progress looks and adjust as necessary.0
