So I saw this recipe on here not too long ago and I made this last night. It was SO good!! I used chicken breasts instead of thighs (like the recipe asked for) so the whole first part with the baking then pulling it off the bone, I was able to skip. Next time I will a The portion is large too for under 400 cals. Check it out.

Go to the skinny taste blog. She has some really great enchiladas I've made them many times. She has 2 kinds that I know of a white/green one and a red one. I've only made the red. They are delish.0
