new, just started working out, sucky diet

hello all

i am ben, just found this site and looks great, love the success stories :) inspirational

i have just started working out, for about 2 weeks now, and really getting into it,
only have a dumbbell set and bench at home, but been reading and watching a lot of stuff online and have a good idea of correct exercises and form etc,
definitely noticeable in my arms already (maybe more psychological than actual but helps motivation in any case)
work out 5 days a week for 40-50 minutes

biggest issue i would like to correct is diet,
basically i am a very fussy eater, honestly eat no more than 20 types of food a year, mostly pasta (4-5 times a week) as i was brought up in an italian family and for the 1st few years of adulthood it worked out a cheap way to feed me and my son,
from what i have started to learn pasta is in a pretty bad food group :( but i cant imagine not having it (especially white pasta) as my main food,
how bad is it really?

on the plus side diet wise, i am proud of myself in the fact that i have cut so much rubbish from my diet,
no more sweets, crisps, biscuits, cola, or any other junk really,
even so far as the day before i started working out i brought a packet of digestives biscuits, and still have that whole pack unopened 2 weeks later, pretty good considering i enjoyed a cup of coffee and biscuits
also cut out sugar from my coffee, from 2 to none

but i struggle to find enough variety in food to consume my aim of 2200 calories a day without thinking maybe making up those calories with a little bit of junk food or just constantly eating weetabix and a few fruits along with the previously mentioned pasta
i cant over exaggerate my fussiness with food, am 33 and for the last 15 years have become set in my ways,
since i been working out my diets has pretty much been weetabix for breakfast, sandwich for lunch with wholewheat bread (sometimes just have another bowl of weetbix) and pasta withsauce for dinner, for snacks i will either have mixed nuts or an apple,
also started having chicken breast and salad as an alternative but not much more than that,

would that lack of variety be a major concern? and i m assuming lack of calories

feel i have made great gains over the last 2 weeks, cut out so much rubbish from my diet and for the 1st time in my life working out,
just feel i really need to correct my nutrition as i keep hearing its incredibly important when aiming for your goals
