I'm seeking healthy recipe inspiration and figure one good recipe deserves another. So here's my contribution ...

Smoked mackerel, spinach, tangerine and wholegrain mustard salad

SERVES TWO (halve ingredients for one!)

Ingredients
  • 2 tangerines peeled and segmented (this is my genius addition to a River Cottage recipe!)
  • 2 smoked mackerel fillets, total weight about 150g (5oz)
  • 4 good handfuls of baby spinach
  • 2 teaspoons cider vinegar or wine vinegar
  • 1-2 teaspoons coarse-grain mustard
  • 4- 6 teaspoons olive oil
  • Optional: 300g (10oz) new potatoes,halved or cut into thick slices

Method
  • Optional (if having potatoes): Add the potatoes to a pan of boiling water and cook for 10 minutes
  • Whisk the vinegar and mustard with the oil to make a dressing
  • Put the spinach leaves, tangarine segments and flaked smoked mackerel in a mixing bowl. Pour over sauce and mix (If using potatoes, mix the ingredients with the potatoes to warm the salad)

    Not quite a recipe, but the other night I made blackened mahi tacos for dinner, to the tune of about ~220 cals apiece (Husband and I each had two).

    Toss strips of poblano (or bell pepper if you don't like heat) in a touch of olive oil and roast off in a 450° oven for ~10 minutes

    Make guac: 1 avocado, 1/2 small white or yellow onion (diced), handful of cilantro, a few squeezes of lime juice, and if you like heat, one diced jalapeno (seeded)

    Cut a 4-5oz mahi mahi filet into four slices, squeeze lime juice over them and coat with desired seasonings (I was lazy so I just used Adobo and paprika), sear slices on each side for 2-3 minutes in margarine, butter, or peanut/canola/vegetable oil (olive will burn)...just watch how much you use

    Make or buy a tomatillo salsa (I used Frontera's, again, I was feeling lazy)

    Warm your tortillas (I used El Milagro 4.5" corn, 50 cals per) and assemble!
