Disappointing Workout

This happened to me at least a few times... I do my workout, but at the end I feel I didn't give it all I had... even though I increased the weight and/or reps for most of the sets, I finish believing I could have given more, that it was a lackluster workout... maybe I didn't work up a sweat, or I'm not fatigued... but the next day I have muscle soreness that is way above the norm.
Then other days I'm thinking I've had a tremendous workout and the next day I can barely feel any soreness at all.... very weird.
