I'm in a rut finding dinner ideals it seems all I can come up with to stay inside my goals is meat and vegies

Eggplant parmesan is good. Slice and bake eggplant. After tender, add marinara and cheese. Zucchini pizza boats: scoop out zucchini, add sauce, veggie, meat, cheese. Bake til tender.
Omelets are good.
Chicken or steak tacos (or fajitas). Use corn tortillas for more nutrition.
Flatbread pizzas.
Wonton cups. Press wonton wrappers in muffin tin. Fill with meat, veggies and cheese. I like ones with chicken, corn, black beans, cheese. Top with salsa after done.

That's pretty much all I eat too. Just change it up with different meats and vegetables. I tend to make a lot of different ethnic dishes and never get bored. Soups are always good also. Pinterest can give you some inspiration.0
