Healthy Slow Cooker/Crockpot Chicken Recipes?

I do my best at spicing up my chicken (literally) when I use my slow cooker overnight. But I'm curious if anyone out there with a culinary gift has some good recipes for chicken that I can throw in at night and take to work with me the next day.
When I say good recipes I basically mean a recipe that doesn't require anything out of a can.
Ideas anyone?

I omit the butter and roll and eat it with lettuce as a salad. It a good alternative to chicken wings when you've got that craving.0 -

My favourite way to do a whole chicken, and takes almost no time to prep. You'd just need something on the side to go with it.0 -

My favourite way to do a whole chicken, and takes almost no time to prep. You'd just need something on the side to go with it.

Season your chicken with salt, pepper, cumin, and paprika, add chicken stock, diced tomatoes, diced green chilies, jalapenos, black beans corn and cilantro, cook on low, shred and serve over rice or a salad, or however you want, it's awesome. I also like to simply slow cook my chicken with homemade salsa.

2lbs boneless chicken thighs. 1 bottle of your favorite BBQ sauce. Turn crock pot on low. Ignore for 6 hours. Come back, shred the chicken, leave it alone for a couple more hours.
Perfect shredded chicken for sandwiches, fajitas, burritos, salads, or whatever.
(You can do this with frozen, just might take an extra hour to get to the "shreddable" stage)0 -
Southwest chicken soup
Chicken bone broth, add cubed chicken breasts, sweet onions, bell peppers sliced thin lengthwise, sliced fresh chili peppers. Cook all day and serve with a blob of sour cream. You can mix it up to make it as hearty or brothy as you like, but a bowl is under 200 calories0 -
I toss chicken in the crock with some salsa and call it food. Put it on a bed of rice, in a taco, or saute some peppers and make it fajita. LOL. I really like making chicken soups in the crock as well. But my favorites for the crock have always been chili or pot roast.0

- boneless skinless chicken breasts
- Unsweetened almond/coconut milk
- curry powder
- hot sauce
- (omitted from how I cook mine, but if you want a thicker sauce) flour
Throw it all in the crockpot and let it do its thing. It's almost impossible for anything to dry out when cooked in the crockpot.0 -
I take about 4 good sized boneless skinless chicken breasts and slice them into strips. Put them in the slow cooker with some chunks of onions, chunks of celery, chunks of fresh carrots and let simmer overnight.
First thing in the morning add some bok-choy including the leaves and brussel sprouts. Then use a package of chow-mien seasoning and some lite soy sauce and let simmer on high.
By the time you get done with your shower you will have chicken chow mien with fresh ingredients. The highest cal's will come from the seasoning package and the soy sauce.
I use this recipe so I can have lunch at school, and I put it over steamed white rice. I do not add any salt, pepper or sugar, but those are my tastes.0
