zucchini noodles RULE!!

I sing the praises of zucchini noodles! I finally had a BIG bowl of "pasta" since signing up with MFP and it was awesome! Don't get me wrong, still eat pasta, but those servings have to be so...little...

I had them the other night with sautéed mushroom, onion, cherry tomato, bacon, olives and pesto. They were amazing!0

This pasta is great and you can eat a ton for same calories...just another option.0 -
I used a box grater to make mine, found a cool blog on line about it with a video. After I made them with the grater (used 2 medium), put them in a sieve and tossed them with a little salt. The salt pulls out some liquid so they are a little firmer, more "al dente". Before adding pasta sauce saute them a little bit in garlic and olive oil. They replace pasta well enough I suppose... mushroom, bacon, olives, and pesto sounds absolutely wonderful!0

I like to make mine sauteed in a bit of olive oil with salt and garlic powder. Then add in some cooked mini shrimp and a little bit of jarred pesto... amazing!0

I use a Julian peeler. I love it!!! You can make them 100 different ways. I don't even bother with pasta anymore!0

I looooove zucchini (well... any squash, really) but rarely eat it outside of zucchini bread around the holidays. I'm going to have to try this! Sounds delicious!0

I got my spiral makers on ebay $12 for two, one makes zoodles and the other makes spirals, kind of like pencil shaving curls!0

I eat zucchini like 4-5 nights a week...are the noodles really any better than just eating it as is?0

I like it because it brings all the other stuff together with it, like how spaghetti picks up the sauce. Also because it's basically all surface area it picks up a lot more flavor, same as if you slice it really thin i guess.0

I love them too either as replacement for pasta, noodles, in salads. Yum.0
