need help - lemon chicken
I want to bbq chicken breasts. I would like to use a lemon marinade. Every recipe I have found includes olive oil or vegetable oil. What can I use as a substitution for olive oil? I can't have any types of oils or fats right now. Or, do you know of a good chicken marinade recipe that does not include oil?

huh? just dont use it if you dont want to.
Marinate in lemon salt and pepper.
I always add a table spoon or 15ml of olive oil and log it. Divide it by how many meals you get out of the chicken. Its only 120 cal for a tablespoon so not bad as you dont even eat it all as most get left behind. I still log it anyway

Also don't be scared to use oil. measure it on scales and log it.
Its not bad for you at all. Yes its calorie dense but your not eating much.
No one thinks of all the oil they eat in comparison in fried foods, would be 10X the amount.

You could do a brine instead, and it should be just as good as any marinade. Just use salt, several lemons, and whatever herbs or spices you want. I could give you a recipe, but if you google lemon chicken brine you'll find all kinds of recipes and instructions on how to do it.0

Thank you! I will check out brining. It's not that I don't want to use oil. For medical reasons I can't have oils and fats for a few weeks. So I was looking for alternate ideas.0

I make a marinade for pork tenderloin that is oil free. Not sure it would work for chicken.
It's apple juice concentrate (1/4 cup), dijon mustard to taste, clove of garlic minced, rosemary, salt and pepper.0 -

Gallbladder issue? Anyway, I'm in for brining. It's a great way to prep a bird. You could also simply season the chicken, no marinade. Make sure you zest some of the lemon rind right onto the chicken before cooking. That makes it super flavorful.0

I cover my chicken in lemon thyme and wrap the chicken breast in foil so it kinda steams in its own juices. It really is lovely.0

Sometimes, I roast chicken breasts in cayenne & Balsamic Vinegar. Super easy, I don't marinate ahead of time, and I do several in a row so I have lunches for the week.
Toss them in a container with quinoa & frozen veggies, spices as you like (sometimes, I just use chili flakes), and you have healthy lunches for the week.0 -

If you're looking for something in the marinade to simply add moistness without fat, try some chicken or veggie broth. Add your lemon and whatever other spices you prefer, mix it all up, and marinate and/or inject it into the chicken. I also use different types of vinegars, apple juice, soy sauce, mustard...etc. Whatever floats my boat at the moment0

If you're looking for non~fat, I marinate mine in Bernstein's non-fat salad dressing. They have several varieties. A couple days ago I used the non- fat Three Cheese Fantastico! Non fat Italian dressing works too. Very flavorful and keeps the breasts super moist. It's my secret go to when I do BBQ chicken and my friends always ask for my marinade recipe LOL.0
