    My meat-loving bf asks me to make this veggie chili often. I think it's pretty tasty, too. TONS of veggies (I use food processor to chop finely). I do omit the white wine, lemon juice, and tri-blend beans.

    Pick out a vegetable you have never eaten before from the grocer's then google or pinterest a recipe.

    This past week I had a roasted whole cauliflower, and this weekend it was asparagus spears. I melted butter and added minced garlic for the asparagus.

    For children, cheesy dips or french dressing makes the vegetables more appealing. Toothpicks, chopsticks, and kabob sticks can encourage some fun with the veggies.

    I have been pre making a few meals at a time with stuffed bell peppers, you can stuff anything in there and put in the oven at 350 and BOOM! Instant dinner/lunch. Lately my favorite has been rice, black beans, chicken, vegan cheese and sour cream, yums.
