Zoodles

One of my Most Favourite recipes ..

As much as i looooove all sorts of pastas aNd noodles im trying to cut back on the extra pounds .
I was deprived of pastas
Till i found this awesome substitute
"Zoodles"
approx 377 calories . For this yummy dish .

It is zucchini shredded to thin "noodle-like" threads.
Dont have the specialized tool ??
EASY !! JUST use a sharp knife .

Ingredients
3 zucchini
2 garlic gloves
1 tbs Olive oil
1 cup plain yoghurt
Thyme
Paprika
cilantro
parmesan "Optional"
Lemon juice "optional"

The zucchini is shredded and boiled for about 5 to 9 min . We dont want to get it over cooked .
In a hot pan put the olive oil and the garlic till the garlic turns brown .
Pour in the yoghurt , thyme , cilantro , paprika and lemon juice and pour it on the zoodles .
Optional " sprinkle parmesan " .

Im having this for tomorrows lunch again
