Easy, delicious 200ish calorie fritatta

Options
1/2 bell pepper, chopped
1/2 large red onion, chopped
3 tbs minced garlic
salt
pepper
4 medium potatoes, sliced
7 eggs
1 cup of shredded cheese (I used full-fat 4 cheese mexican blend)

(Pre-heat oven to 350F)
1. Put potatoes in a single layer on microwave safe plate, wet a paper towel over them and microwave for 3-5 minutes until tender.
2. In a mixing bowl, lightly beat 7 eggs, add red pepper and cheese, set aside.
3. Sautee onions and garlic until tender and fragrant
4. Add onions and garlic to eggs and pepper
5. arrange potatoes in the bottom of a cast iron skillet, or other oven proof dish (I use cast iron so that it only dirties one pan).
6. arrange potatoes so that they completely cover the bottom of the pan
7. pour egg mixture over potatoes
8. Bake for 10-15 minutes or until the eggs are cooked through


This is DELICIOUS and when cut into 8 slices it is about 212 calories. I make it, then slice it and eat it for breakfast or lunch all week.
