Jacques Pépin French Omelette a la Huevos Rancheros

Kinda...not quite Huevos Rancheros...but kinda...

I was really hungry and this hit the spot:

A three egg omelette as prepared like Jacques Pepin except cilantro instead of chives, plated.

Sprinkled 1/4 c. Sargento 4 Cheese Mexican shredded cheese on omelette.

Cut up an avocado and put one half on each side of omelette.

I mixed a 15 oz. can of Eden Organic Black Beans (No Salt) with 8 oz. Green Mountain Gringo Hot Salsa and topped the avocado with 1 c. bean mixture.

OMG...super yummy, warm and filling.
