Healthy Crockpot Recipes?

Ok so I'm a busy mom, who isn't busy though right? Anyway, I'm a single mom, so by the time I get home from work, and help kids with homework, and do the 100 other things we have to do, I find that eating a nice healthy dinner has been not going so well lately. I love my crockpot, and love being able to put stuff in it in the morning, and have dinner ready when I am home, but I was wondering, does anyone have any good recipes? I was searching online and found a ton, but I wanted to hear firsthand from someone what they have tried and what is really good. Help me out guys! :)

    Beef Stew:

    Layer the following:
    Bottom: chunked onions, carrots, celery
    Middle: Beef chuck roast cut into pieces (or any somewhat marbled cut)
    Top: Potatoes cut into pieces, mushrooms if desired.

    Toss in some salt, pepper and any other flavoring spices you wish (bay leaf recommended). Pour in a bottle of dark beer (don't worry about the alcohol, it will be long gone. Guinness works really well here as it is also quite low-calorie) and then fill with water up to about the middle of the meat layer, but no higher. You can sub beef broth if you want to avoid the beer.

    Turn it on low. Ignore for the whole day (8+ hours). When ready to serve, skim off the fat and you are done. You can thicken the gravy with some flour if you like, or just leave as-is.



    Shredded chicken or pork shoulder (makes excellent tacos, fajitas, carnitas, pulled meat sandwiches, etc)

    2-3lbs of boneless chicken thighs, or 2lbs or pork shoulder (or country ribs).
    1 bottle of BBQ sauce.

    Turn on low and ignore for 6-8 hours. Shred the meat, then let it go a little longer still.

    I lived for my crock pot when my boys were younger and into sports and numerous activities. I still use my crockpot constantly this time of year... When I go grocery shopping and have to put away the groceries anyway so I split my chicken for instance between 6~8 gallon freezer bags and add veggies, seasoning, chicken stock and what not to make for instance chicken curry, a "savory" chicken with lots of veg and another recipe or soup that might sound tasty that week. It gives me two ready to go dinners of each recipe that I cycle through with another three recipes I did the previous week. For about an hour effort and one kitchen clean up it's a real time saver. I keep the rice or noodles to prepare separately so I can control my carb portion. The chicken doesn't need to be precooked, but hamburger or ground turkey does at least need a start on browning.

    Salsa chicken.... Throw in your boneless chicken, cover with a jar of salsa then shred the chicken when it's cooked. Great for tacos, burritos, or a Mexican salad. Super quick to toss in on a hectic morning.

    Pork loin.... I usually put a dry rub on the pork, throw it in and let it go (no added liquid and can be tossed in frozen) .... Mashed potatoes are quick, add green beans and salad. Favorite family dinner here... Or you can shred it for pulled pork sandwiches if you toss in some BBQ sauce instead of a rub... Just drain the liquid, add a bit more sauce, coleslaw, maybe open a can of pork &beans for the kids

    My boys liked "hamburger soup" ... Ground meat, chopped onion, a package of frozen mixed veggies and any you might want to use up in the fridge, chicken or beef stock, seasonings... Serve with noodles you boil while the kids set the table.

    I hit Pinterest all the time for new ideas. Have fun experimenting :D

    You need Pinterest. There are SO many recipes. And lots are posted by ladies in similar situations. All you need to do is search healthy crock pot/slow cooker.
