Macro dieting

I have a question for the experts out there??? Can someone explain to me how the macro dieting works? For example- I'm trying to lose weight and stay lean. On my cheat days, I usually go for sushi and realize that my daily carb intake is too high, so if I eat a can of tuna and some egg whites, it shoots back down to where it needs to be but adding more calories to the diet. I was wondering why I have to eat all that protein and add those calories?
