Decadently Dressed Green Beans

Dress steamed green beans with crumbled blue cheese, candied walnuts, dried cranberries, and a balsamic reduction. Nutrition numbers will vary with how much of each ingredient you use. 1/2 an ounce of blue cheese, half a dozen walnut halves, and 6-8 dried cranberries go a long way toward making a tasty serving!

To candy the walnuts, put one tablespoon sugar for every six walnut halves in a skillet or heavy bottomed sauce pan. Add a pinch of salt. Heat over medium-high heat, stirring constantly until sugar melts and coats the walnuts. When the walnuts are toasted and coated with a lovely golden coating, spread the walnuts out on parchment paper, silpat or other non-stick surface to cool.

To make a balsamic reduction, boil 1/4 cup per serving balsamic vinegar in a non-reactive sauce pan until it reduces by at least 1/2 and becomes a syrup. Set aside to cool. Make more than one serving at a time and save for future use in the fridge.

To assemble, pile the green beans upon each plate. Top with blue cheese crumbles, candied walnuts and dried cranberries. Drizzle balsamic reduction on top. Mix as you eat.
