Is it better to take a full rest day and meet your calories for maintenance or is it better to do some light cardio like walking?

If you feel tired take a rest day but walking everyday is good for you and will not hurt you. Listen to your body.0

Either is fine. However, I'm pretty sedentary outside of my workouts, so I do light workouts (like non-strength-focused yoga) and walks and such. Otherwise I'd have no activity really!
I also like the routine of daily exercise, and it boosts my mood. So I take it easy, but I do exercise on my rest days. It's also a great opportunity to work on easing sore muscles.
As queenliz99 said, taking a walk won't hurt you.0
