Low Calorie Curry (style dish)

(For two people)
Two red onions sliced
One bell pepper cubed
Mushrooms
One tin of chopped tomatoes
Three tablespoons of red lentils
Garlic
Turmeric
Coriander
Cumin
Cayenne pepper

Slice/dice vegetables and place in a pan. Pour just enough boiling water over to cover. Add the red lentils to the mix. Cook on the hob for 5 minutes. Add the chopped tomatoes to the pan and add the various spices. One clove of garlic and enough of each spice to taste. Add mushrooms and cook on a moderate heat for a further 10 minutes.
