How to get your Vegetables in

I am someone who doesnt like vegetables AT ALL!! Trying to find different ways to get them in. Any ideas?

    try roasting them - they get all sweet from roasting. oh and in casseroles, tomato sauce, "creamy" soups (cauliflower soup blended creamy is amazing)!

    Smoothies and juices are great ways to sneak the more potent veggies into your diet. Salads with homemade dressings are another great way to get a lot of green into you - I love blending up some berries with lemon, ginger, cucumber and celery for a light healthy dressing. You could try some chilli recipes in a crockpot for easy veggie based meals. Also and soups are fabulous - you can toss in just about anything and with a nice coconut base and a little spice it's hard to create a bad recipe. Also, when I first started dieting, I used to trick myself into eating more veggies by just loading them onto my already fav 'treat meals' - like nachos, pizza pasta etc. Start adding 2-4 more cups of chopped veggies onto those kinda meals and you'll start loving them! :)

    I love cauliflower soup. My immersion blender is getting used a lot now. Broccoli soup is delicious too. I boil the veggies along with onion, garlic and sometimes some sweet peppers or hot pepper, then blend it in the pot. Add a little grated parmesan once it's in the bowl. Yum! Cheesy creamy veggie soup that is very low calories

    Buy them fresh in season where possible from your local farmer's market. It's amazing what a real cucumber is supposed to taste like!

    And I agree, roast them with a little bit of olive oil and vegetable spice; it brings out the flavour something fierce.

    Maybe you could try "hiding" them in things you already enjoy?

    I tend to do this for my son. For example, I steamed some broccoli, blended it up and added it to an alfredo sauce (he ate it up and thought i had just colored it for "fun"...he's 4). I have done spinach in tomato sauce for spaghetti and also zucchini in chili (chop it up super fine)...he likes to top his chili with cheese and sour cream so he doesn't even notice!

    Try them in different ways, different seasonings. And even if you didn't like them in the past: try again. Sometimes its not the flavor, but becoming accustomed to a different texture.

    And when all else fails, sometimes as an adult you do what you know you should - not just want you think you want. And then it gets easier.

    I was THE picky eater growing up. I 'didn't like' many things but never really gave them a chance. I still have some issues there - like I can't handle the texture of mushrooms and won't even try. But I eat green beans, zucchini, cauliflower, spinach, etc. Some things I like on their own - like carrots and celery - but can't stand them in a salad. Broccoli, zucchini, cauliflower are all good baked. Toss w/ some olive oil & seasonings (garlic, pepper, etc.) and add some parm cheese if you like - then bake for about 15-20 minutes.

    You can also get a handheld blender, and blend things into a sauce. Get the flavor and nutrition without the chunkiness.

    You can shred them and put them into soups, lasagna/pasta dishes, burgers, etc. Basically the "hiding thing."

    You can replace pastas with spaghetti squash or with other vegetables. I saw this "As Seen on TV" type thing that you can use to make zucchini into "spaghetti".

    I put 1 cup of leafy greens in my nutri-bullet every morning. Sliced peppers & carrots for snacks mid-morning. Cherry tomatoes for an afternoon snack. 2 large veggie sides at dinner.

    I mean, you can always just get the frozen vegetables and boil them up in a pan and add them as a side to your lunch and dinner.

    What makes you dislike them? Is it the consistency, texture, smell...an unfortunate broccoli incident as a child? If it's texture or consistency, make a vegetable smoothie then add it to meat for meatloaf, or to pasta sauce (as another poster said), or soup. It flavors the meat, adds vegetables to your diet. If it's flavor, find the most mildly flavored veggies you can and add them to what you already eat. Maybe make a goal to try one new vegetable a month. You may find out you love one of them.

    So many vegetables. So many textures. So many flavors. So many cooking methods. And you don't like ANY of them? This is a psychological thing most likely.

    Try different vegetables prepared different ways until you find something you can tolerate. You might even find some that you enjoy.

    Idk how feasible this will be with your calorie goal (I'm in maintenance) but I'm having trouble eating mine right now due to health issues so I've been getting them in a couple of ways. Like others have said, I do a lot of smoothies with spinach and celery blended in. I also like throwing them in pasta with cream sauce. Or tossing them into my macaroni and cheese seems to work well. Basically pair them with things you do enjoy that will mask the flavor.

    Make sure you try roasting though-- I love roasted vegetables.

    I would say to have them in or on foods you like. Chop carrots, onion, spinach, etc up fine and mix with ground meat for meatloaf, meatballs or burgers. Try vegetables on pizza, in pasta sauces, or soups. Try stir fry vegetable dishes. Prepare vegetables with sauces or cheese if you don't like them plain. Try new recipes with interesting flavor combinations. Try roasted or grilled vegetables. Try vegetables you have never had before.

    What does being a grown up have to do with not liking veggies?


    Op- there are tons veggies of out there perhaps you will find one you like. What I do, is when I to the supermarket, I experiment. I force myself to pick out a veggie that i never tried before. Then during the week, I experiment with different ways of cooking that veggie.
