This one is low sodium. But you can use any pasta sauce or stock you like.

Roasted Butternut Squash Soup:
Peel and roughly chop one butternut squash
roughly chop an onion and garlic
lightly toss in EVOO with a bit of salt and pepper
Roast in the oven at 400 for about 30 mins
sautee chopped carrotts and celery in a tbsp of butter (salt and pepper)
Nutmeg to taste
at squash, and 4 cups of low sodium chicken broth
at more nutmeg to taste (you may ad a cup of cream or coconut milk if you like, I do not)
let boil until tender, emulsify the mix in blender or with hand blender
You can top with : Basil, garlic croutons, sour cream... all to your own liking. I'd post a pic but not sur ehow and it wont let me. But it is delicious, i dont use measurements lol sorry.
