Hmmm....one thing I notice about your diary is that your fats are really low. Fat is not the enemy, we need fats in our diet. You could easily add more calories to your day by eating whole eggs rather than just the whites, and put some olive oil (and balsamic vinegar or lemon juice) on those daily salads. Those two steps will increase your calorie count without overloading your plate.

Also curious about your high calorie burns - are you using MFP's calculations or do you have a heart rate monitor? Might consider getting one if you don't, MFP's burn estimates are often really high.

The only other thing I can offer is that if you can't eat enough to hit your goal due to the high exercise burns, then you need to cut back on the exercise. Over training and under eating can cause you problems in the long run, and derail any results you were hoping to get from all your hard work. Great article about that here: http://www.shapefit.com/overtraining-exercising-too-much.html

Maybe add nuts or seeds to your salads? They tend to be calorie dense, but won't make you feel stuffed.
