Best Asparagus Omelette, Under 300 Calories

This recipe turned out so well that I just must share it. There are two main components, the grilled asparagus and the omelette itself. It is one of the best tasting omelettes I've ever had!

Grilled Asparagus:
Preheat oven broiler
While oven is heating prepare asparagus for cooking
Rinse and snap off the bottom of each stem
Dry and place in a bowl
Drizzle on a TBSP of olive oil and coat all stems
Place on a cookie sheet
Sprinkle with salt
Broil for 10 minutes or, until just tender

I like to make up a pound of this and use it for a couple of meals

The omelette:
3/4 cup of egg substitute, 75 calories
1 oz shredded mozzarella cheese, 80 calories
4 stems broiled asparagus, 30 calories
3 strips cooked bacon, 90 calories

Preheat nonstick skillet over medium low heat
Coat skillet with cooking spray
Add egg substitute
Sprinkle the cheese over the egg
Add asparagus
Fold omelette when egg is set
Cook for another 2 minutes, until egg is fully cooked. (Some folks like the eggs softer and a little runny.)

Serve with bacon
