I LOVE no bake cookies. Love, love, love them. I don't allow myself to eat them because I can't stop at just one. I've been wanting to make a no bake with healthier ingredients and lower calories so adapted a recipe and came up with this. It really really good and a hit with the family....
2 C stevia
1/2 C almond milk
1 stick butter (had to have this)
2 TBSP cocoa
2TBSP chocolate protein (I use royal clean)
1/2 C PB2
1/2 C peanut butter protein (I use quest)
1 tsp vanilla
1TBSP pure maple syrup
3C oats
Mix PB2, maple syrup, peanut butter protein with a little water until creamy.
Heat almond milk, butter, stevia, cocoa and chocolate protein. When butter is melted add peanut butter mixture, vanilla and oats. Stir until well mixed. Spoon mixture on wax paper and put in fridge.

If you get 20 cookies (I did) it's 105 calories and 10 carbs. Same recipe not "healthy" is 278 calories and 30 carb!! Try them and let me know. If you don't have protein powder use 1 cup PB2. I just didn't want to use that much of my PB2.

I got 20 fairly large cookies out of this. This is for 1 cookie. They are really good! You have to like the stevia flavor. some people don't like the fake sugar taste.
