Breakfast - Caprese Eggs
As a certified "food mixer" I'm always looking at ways to connect foods and stay on track. My newest creation was too good not to share. If you love caprese salad I urge you to try this breakfast spin on it. For 283 calories, this hearty and fresh breakfast is a great start to the day.
Three of each
Fried egg whites (with Pam)
Sliced Tomatoes
Fresh mozerella one ounce slices
Fresh basil leaves
I used about 2 tbsp of basalmic vinegar, which was plenty
While the eggs were frying, I put the rest of the plate together. When the eggs were done, I cut it into three pieces and plated. Splashed the vinegar and voila.... Delish!!!
You can reduce this by just taking one or two portions away. This was plenty of food and I have done less and enjoyed also.
