Question about making whey powder.

The whey I get from making goat cheese has mostly been going to the dogs. I saved a little to add to chicken soup stock. However, I've found a recipe for homemade whey powder that intrigues me. The recipe consists of bringing the whey to a caramel-like color, pouring it onto wax papered cookie sheets, and allowing it to solidify before breaking it into chunks and storing it "to dry for a few weeks." Once it's dried, it is (allegedly) possible to grind the whey into powder in a blender.
My question is: does anyone think that the drying whey could be dried more quickly in a dehydrator or in a slow oven? I'd really like to try this, but I can't think of anyplace here that I'd be willing to store something for several weeks before preparing. I just don't have that much room in my kitchen.
