Hi guys I'm looking for some yummy vegetarian recipes preferably without pasta

I tried the spaghetti squash chow mien and its good - if you add lots of flavors like the ginger, soya sauce, garlic etc...I even added sesame oil and hot sauce....used cabbage, mushrooms , cauliflower, broccoli, onion..
first cook squash in oven , then do the rest0 -

I just bought a Spiralizer, and I can't get enough of the zucchini noodles I can make with it. The look and texture are satisfyingly pasta like. As for the taste, you can flavour them any way you feel like.

Quinoa is a great base for a ton of recipes. I just made a quinoa "tabbouleh". Cook quinoa just like you would rice, though make sure to rinse thouroughly in water before or it will be bitter. Cut onion and soak in water for a bit to cut the sharpness. Then you just cool the quinoa, add the onion, some tomato, mint, parsley, lemon juice, touch olive oil and salt and pepper. Came out to less than 400 calories and it was delicious and filling!0

Try Mujadra. You can Google for a recipe, but the basic recipe isa cup of dry lentils, a cup of dry bulgur or rice and a pound of deeply caramelized onions. Serve with a dollop of yogurt0

Some of my favorites are veggie chili, pureed roasted root veggie soups, veggie burgers (I make bean/lentil patties), fritattas, salads (obvious), pizza, burritos & grilled cheese. Lots of options for you0

I just made a kale and pinto bean soup the other day. It is very low calorie and very good. It's 4 cups veggie broth, 7 kale stalks, 1red bell pepper, 3 carrots, around 5-6 ounces of mushrooms, two small yellow onions, and 1 can of pinto beans. Sea salt, pepper, and garlic powder to taste.
You chop up the kale, bell pepper, carrots(after peeling), mushrooms, and onions, and add it to the veggie stock in a large pan. Add the mostly drained pinto beans and seasonings. Let it cook on medium for a short while, and then let it simmer for about an hour. It's great!0 -

Tagine made with chickpeas, zucchini, eggplant, pumpkin, red onion and dried fruit in a Moroccan spiced tomato sauce. You could have it like that, or serve it with couscous/rice/naan.
Mixed bean chili (black and kidney beans with bell pepper and red onion in a spicy tomato sauce). Serve with rice, tortillas or lettuce wraps.
Pumpkin, leek and goat cheese quiche served with a mixed salad.
Lentil and sweet potato dahl.

Try any hot and spicy Indian curry. By the way, on a daily basis, cream/ coconut milk/ cashew paste are not added to the curries. Also, ghee and butter are usually substituted with vegetable oils.0 -

Then they're not vegetarians. Vegetarians don't eat animal flesh. Just like "some vegans eat honey" makes no sense. Wiki: "Pescetarians are sometimes described as vegetarian or pesco-vegetarian, but vegetarians commonly do not consider the pescetarian diet to be vegetarian. For example, the Vegetarian Society, which initiated popular use of the term vegetarian as early as 1847, does not consider pescetarianism to be a vegetarian diet."
OP: You didn't specify that you wanted dinners specifically, so I will say that hummus is the most versatile lunch food ever. I go through phases where I make it 5 cups at a time and spread it on everything I eat. You can also add in things like avocado and spinach for green hummus, which is fun and tasty.
