Chia, Quinoa & Extra Virgin Coconut Oil and Type II diabetes

Does anyone have any experience with Chia seeds, Quinoa or Extra Virgin Coconut oil?

    Coconut oil is one of my favorite things. Quinoa I do not not care about one way or another because its nutritional facts are almost the same as rice. The difference between it and rice is that botanically quinoa is not a grain because it is a seed.
    Chia seeds are good because one ounce contains 9 grams fat, 12 grams carbs, and 5 grams protein.

    Hi:

    I have a brother with Type 2 diabetes. He eats healthy including chia, quinoa and coconut oil. He is extra careful with his carbs and measures his glucose daily.
    He tells me the key is to manage the carbs carefully. He uses MFP tool.

    I use quinoa because I read it's a source of 'complete' protein, also it's quite low in calories and tastes great with lemon or lime juice and zest, a little rapeseed or olive oil, avocado and/or walnuts, sun-dried tomatoes, loads of coarse-ground black pepper - delicious side dish, hot or cold.
