I won't be going to IHOP (just donate otherwise), but will be having a huge stack of TJ's gluten-free pumpkin pancakes topped with pumpkin butter, cinnamon, and crushed pecans or pumpkin seeds; egg whites and bacon on the side; almond milk to wash it down. Bring on the pancakes!

    My favorite pancake recipe!

    Blueberry Protein Pancakes - gluten free/grain free

    In one bowl mix
    1/2 c coconut flour
    1 scoop vanilla protein powder
    1/2 teaspoon baking soda
    pinch salt
    1 teaspoon cinnamon

    In another bowl mix
    1/3 cup plain greek yogurt
    1 small baby food applesauce (I like Earth's Best because its organic - 6 month old size)
    4 eggs
    1 teaspoon vanilla
    3/4 cup frozen blueberries - I microwave these for 45 sec to defrost
    1/4 almond milk + more for consistency when the dry is mixed with the wet

    Mix the dry with the wet ingredients - I use coconut oil on my pan for a good fat source and non-stick.

    Sounds fun. I'd want them for dinner, but then I'd have to make some for other people and cooking for other people just sucks.
